- Stir fry noodles (Yakisoba)1 head(s)
- Yakisoba sauce2 tsp

- Cake flour (Pastry flour)20 g

- Bean sprouts60 g
- Deep fried tempura bits (Tenkasu)1 tbsp

- Salt and pepper mix2 three finger pinches

- Salad oil2 tsp

- Okonomiyaki sauce2 tbsp
- Japanese Mayonnaise2 tbsp
- Dried green seaweed flakes (Aonori)as needed
How to make
- Prepare. Chop off the roots of the green onion and set aside.
- 1. Shred cabbage. Cut the green onion into 0.2-inch pieces.
- 2. Cut the pork belly into 4-inch pieces.
- 3. Add the dough ingredients into a bowl and mix with a whisk.
- 4. Heat a pan over medium heat, add cooking oil, add Step 3, and spread it thinly in a round shape, cook for about 2 minutes until the surface is dry, then remove it to a bat.
- 5. Add Step 2 to the same pan, cook until both sides are browned, add Japanese stir-fried noodles (yakisoba), cook until the yakisoba is coated with oil, then season with the yakisoba sauce. Remove to a heat-resistance bowl.
- 6. Heat the same pan over low heat, crack the egg, and spread the egg into a circle while beating lightly with a spatula.
- 7. Add Step 1, bean sprouts, salt and pepper mix, deep fried tempura bits (tenkasu), bonito flakes, and tororo kombu, cover with a lid, and steam cook for about 5 minutes.
- 8. Place Step 4 on top and remove from the heat. Serve on a plate, top with toppings, and it's ready to serve.
Tips for cooking
Please adjust the amount of saltiness by adding sauce to your taste. Please use your favorite toppings. Seafood such as shrimp and squid also goes well.
