- Daikon radish100 g
- Carrot60 g
- Onion1/4
- (A)Water400 ml
- (A)Miso1 tbsp
- (A)Japanese sweet cooking wine (Mirin)1 tbsp
- (A)Sake1 tbsp
- (A)Japanese style granulated soup stock2 tsp
- White ground sesame2 tbsp
- Sesame oil1 tsp
- Toppings
- Soft-boiled egg (onsen tamago)1
- Young green onion (Konegi)as needed
How to make
- 1. Peel teh skin of daikon radish and carrots, cut them into 3mm wide quarter rounds, and thin-slice the onions.
- 2. Put ingredient (A), ingredients from Step 1 into a pot and simmer over low heat for about 10 minutes.
- 3. Once the ingredients have absorbed the flavor, add the white ground sesame seeds and udon noodles, and simmer over medium heat following the instructions on the udon package.
- 4. Serve in a bowl, pour sesame oil in a circle, add some toppings, and it's done!
Tips for cooking
You can adjust the amount of seasoning to your liking. For senior citizens, children under the age of 2, pregnant women, and individuals with weakened immune systems, please avoid eating raw eggs.
