  • Hot water

  • Spicy pollack roe
    50 g
  • Green shiso leaves
    5 sheets
  • (A)Japanese versatile dashi base (Shiro-dashi)
    2 tbsp
  • (A)Japanese sweet cooking wine (Mirin)
    1 tbsp
  • (A)Salted butter
    20 g
  • Milk
    200 ml

How to make

  1. Prepare. Squeeze spicy pollack/cod roe (mentaiko) from the skin.
  2. 1. Cut off the stem of green shiso leaves and slice it thinly.
  3. 2. Add udon noodles to a pot of boiling water, boil according to the instructions on the package, and drain.
  4. 3. Add (A) to a pot over medium heat, bring to a boil, add milk, and remove from the heat just before boiling.
  5. 4. Add Step 2 and Step 3 in a bowl, top with mentaiko and Step 1, and it's ready.

Tips for cooking

If you are not used to spicy food, you can use salted pollack roe (tarako) instead. We used shiro-dashi type that is 10 times concentrated. The flavor and intensity of shiro-dashi differ depending on the type, so please use the amount on the package as a guide and adjust to your preference.
