- Pork belly250 g
- Cake flour (Pastry flour)2 tbsp
- Green shiso leaves12 sheets
- Water50 ml
- (A)Soy sauce2 tbsp
- (A)Japanese sweet cooking wine (Mirin)1 tbsp
- (A)Sugar1 tbsp
- (A)Cooking sake1/2 tbsp
- Salad oil1 tbsp
How to make
- Prepare. Remove the stems of green shiso leaves.
- 1. Lay out half of the pork belly. Sift 1/3 of cake flour (pastry flour), place half of the green shiso leaves on top, and roll horizontally.
- 2. Similarly, sift 1/3 of pastry flour over the remaining pork belly, lay out the remaining green shiso leaves, place Step 1 on top, roll up, and sift the rest of the pastry flour entirely.
- 3. Add cooking oil to a pan, place the end of the roll of Step 2 face down, and heat the pan over medium heat. When overall has browned, add water, cover with a lid, and steam over medium heat for about 20 minutes.
- 4. When pork belly is cooked, add (A) and heat over medium heat.
- 5. When the flavors are well blended entirely, remove it from the heat, cut it into bite-size pieces, and serve them on a plate to complete the dish.
Tips for cooking
Please adjust the amount of salt and soy sauce to your taste. Since the pork belly is thick and difficult to cook thoroughly, please adjust the cooking time while checking the condition.
