★Seasonings ・200 ml water ・1 tbsp curry powder ・1 tsp granulated consomme ・1 tsp grated garlic

■Instruction 1.Remove the stems from the eggplant and zucchini, and cut them into 2cm cubes. Remove the stems from the cherry tomatoes. 2.Heat olive oil in a frying pan, add eggplant and zucchini, and saute over medium heat until they become tender. 3.Add ★, along with the canned mackerel (including the liquid) that has been flaked. Mix well and cover with a lid, simmer on low heat for about 5 minutes. 4.Once the lid is removed, add the cherry tomatoes and continue to simmer while stirring for an additional 3-4 minutes. 5.Serve in a bowl and sprinkle with chopped basil, enjoy!
