- Eggplant2
- (A)Ponzu sauce1 tbsp
- (A)Japanese sweet cooking wine (Mirin)1 tbsp
- (A)Sugar1 tsp
- Water50 ml
- Sesame oil1 tbsp

- Young green onion (Konegi)as needed
How to make
- Prepare. Cut off the stem of the eggplants and set aside.
- 1. Cut eggplant in half lengthwise and divide into 3 equal parts. Make a 0.2-inch wide slit diagonally across the skin.
- 2. Heat sesame oil in a pan over medium heat, add Step 1, and cook until browned all over.
- 3. Add (A) and heat over medium heat. When it comes to a boil, lower the heat, add water, and cook for about 3 minutes until all the flavors are absorbed.
- 4. Arrange Step 3 ingredients in a bowl, sprinkle with bonito flakes and young green onion (konegi).
Tips for cooking
You can substitute sesame oil with cooking oil. Please adjust the amount of seasoning to your taste. By making some slits into the eggplants, the flavor will easily soak in a short time. *You must be of legal drinking age
