Delicious Vegetable Miso Soup - Recipe Video

A simple and easy to understand recipe video shows how to make Delicious Vegetable Miso Soup.
For this miso soup recipe, we made natural dashi so that we can enjoy the deliciousness of vegetables. Using dashi kombu for extracting dashi on its own is delicious enough, but by adding dried bonito flakes as a topping at the end, it enhances the dashi flavor even more. It's easy to make, so please give it a try!

  • Burdock root
    40 g
  • Carrot
    40 g
  • Daikon radish
    50 g
  • Shiitake mushroom

    500 ml
  • Kelp dashi (Kombu dashi)
    2 g
  • Miso
    2 tbsp
  • bonito flakes
    2 g

How to make

  1. 1. Put the water and dashi kelp (kombu) in a pot and rehydrate the kombu.
  2. 2. Cut the vegetables into bite-size pieces.
  3. 3. Heat a pot prepared in Step 1 over medium heat and remove the kombu just before it starts to boil.
  4. 4. Add the vegetables from Step 2 into the pot and cook over medium heat until the vegetables become tender.
  5. 5. Turn off the heat, melt and mix in the miso, then it's done! Serve it in a bowl and sprinkle some bonito flakes.

Tips for cooking

Instead of making dashi from the dried bonito flakes, we made it so that you can add them to your liking and enjoy the flavor as well as consume the bonito flakes itself. You can choose to boil the vegetables after making dashi with kelp (kombu) and dried bonito flakes. If you are using Japanese style granulated soup stock instead, omit the dashi kombu and bonito flakes.
