- Shrimp150 g
- Starch1 tbsp
- Water2 tbsp
- Batter
- Egg whites25 g
- Starch25 g
- Salad oil1 tsp
- (A)Japanese Mayonnaise3 tbsp
- (A)Condensed milk1.5 tbsp
- (A)Lemon juice1 tsp
- (A)Egg yolk1
- (A)Salt and pepper mix1 three finger pinch
- Frying oilas needed
- Mizuna mustard greens30 g
How to make
- Prepare. Cut off the base of mizuna mustard greens and cut into 1-inch wide pieces.
- 1. Remove the shell and tail of the shrimps, and cut the back with a knife to remove the back cotton.
- 2. Add Step 1, starch for preparation, and water to a bowl, and rub well. Rinse under running water and pat dry with a paper towel.
- 3. Add ingredient (A) in a bowl and mix together.
- 4. Add the batter ingredients and Step 2 in another bowl and mix together.
- 5. Pour 1-inch depth of frying oil into a pan, heat to 170℃ (340°F), and add Step 4. Deep-fry for about 5 minutes until cooked through and lightly colored, then drain the oil.
- 6. Add into Step 3, toss well, serve on a plate covered with mizuna mustard greens, and it's ready to serve.
