- Pork shoulder150 g
- Hot wateras needed
- Radish sprouts70 g
- Red cabbage sprouts10 g
- Japanese ginger (Myoga)1
- Grated Daikon Radish and Mentaiko
- Daikon radish100 g
- Spicy pollack roe40 g
- Sauce
- Ponzu sauce1 tbsp
- Sesame oil1 tsp
- Roasted white sesame seeds1 tsp
How to make
- Prepare. Peel the daikon radish. Remove spicy pollack/cod roe (mentaiko) from the skin.
- 1. Cut off the roots of the radish sprouts and red cabbage sprouts. Shred the Japanese ginger (myoga). Mix together in a bowl.
- 2. Make the mentaiko with grated daikon radish. Grate the daikon radish and drain off the water. Put the mentaiko with grated daikon ingredients in a bowl and mix together.
- 3. Make the sauce. Put the sauce ingredients in a separate bowl and mix well.
- 4. Boil the pork shoulder in boiling water for about 2 minutes until cooked through, then cool it under running water and drain off the water.
- 5. Place Step 1, 4, and 2 on a plate, and pour Step 3. It's ready.
Tips for cooking
Adjust the seasoning of the sauce to your liking. Pork shoulder can be substituted with pork belly or pork loin.
