- Red shiso leaf100 g
- Salt15 g
- Salt15 g
- Lemon juice2 tbsp
- Dried whitebait25 g
- (A)Noodle soup base (Mentsuyu)1 tbsp
- (A)Cooking sake1 tbsp
- (A)Japanese sweet cooking wine (Mirin)1 tbsp
- (A)Sugar1/2 tsp
- (A)Salt2 three finger pinches
- Roasted white sesame seeds1 tsp
How to make
- 1. Remove the red shiso leaf from the branch and wash well with water.
- 2. Coarsely chop it, sprinkle with salt for preparation, and leave it for about 5 minutes, then wash with water.
- 3. Squeeze Step 2 well, sprinkle it with more salt for removing the harsh taste, and leave it for about 10 minutes. Squeeze out the water and sprinkle with lemon juice.
- 4. Put Step 3 and Dried whitebait in a pan heated over medium heat and stir-fry.
- 5. Once mixed, add ingredient (A) and stir-fry it over medium heat.
- 6. When the liquid has evaporated, turn off the heat, add the white roasted sesame seeds, then mix and serve it on a plate. It is ready.

Please adjust the amount of salt to your taste.
