- Chicken wings4
- Daikon radish400 g
- Wateras needed
- Konjac (Konnyaku)100 g
- Broth
- Water600 ml
- (A)Cooking sake2 tbsp
- (A)Light soy sauce1.5 tbsp
- (A)Japanese sweet cooking wine (Mirin)1.5 tbsp
- (A)Japanese style granulated soup stock1 tsp
- (A)Salt1 three finger pinch
How to make
- Prepare. Peel daikon radish and set aside.
- 1. Cut daikon radish that has 4 equal rounds. Round off the corners and make a shallow cross-cut on both sides.
- 2. Make a 0.2-inch wide grid cut on both sides of konjac and cut it diagonally in half.
- 3. Add water and Step 1 in a pot, heat over medium heat, and boil for about 20 minutes until it becomes soft enough to pierce a bamboo skewer, then drain.
- 4. Heat water for broth and chicken wings in another pot over medium heat, then remove the scum after it boils.
- 5. Add Step 3, Step 2, and (A), cover with a lid, and cook over medium heat for about 30 minutes, then remove from heat when chicken wings are cooked through.
- 6. Transfer to a bowl and it's ready to serve.
Tips for cooking
Daikon radish is difficult to cook through, so please boil slowly and thoroughly from water. Please adjust the seasoning to your liking.
