Ingredients 5 skewers
- Gizzard150 g
- Cooking sake1 tbsp
- Japanese leek1
- Salt and pepper mix1/3 tsp
- Sauce
- Cooking sake2 tbsp
- Japanese sweet cooking wine (Mirin)2 tbsp
- Soy sauce2 tbsp
- Sugar1 tbsp
- Salad oil1 tsp
- Green shiso leaves1 sheets
How to make
- Prepare. Trim the white stripe from gizzard.
- 1. Cut Japanese leek into about 0.8-inch wide pieces and make 10 equal pieces of it.
- 2. Add gizzard and cooking sake in a bowl, rub then rest for 5 minutes.
- 3. Thread in the order of Step 1 and Step 2 on bamboo skewers and sprinkle salt and pepper mix.
- 4. Mix the sauce ingredients in a bowl.
- 5. Add cooking oil to a pan. Align Step 3, turn the heat to medium, cover with a lid, and cook for 10 minutes.
- 6. Flip it over and cook for 5 minutes over medium heat, pour Step 4 evenly, when the taste is blended until the juices are gone, then place it on a plate which placed green shiso leaves, and it's ready to serve.
Tips for cooking
The texture of the gizzard improves if you remove streaks, but you can still cook without removing the streaks. You can also make with the green part of Japanese leeks. Please eat it with seven flavor chili pepper if you like. *You must be of legal drinking age
