- Pork belly200 g
- Lettuce1 head(s)
- Japanese leek1
- Silk tofu200 g
- Enoki mushroom100 g
- Water600 ml
- Kelp (Kombu)10 g
- Processed soy milk200 ml
- (A)White ground sesame2 tbsp
- (A)White sesame paste2 tbsp
- (A)Miso1 tbsp
- (A)Sugar1 tbsp
- (A)Cooking sake1 tbsp
- (A)Japanese sweet cooking wine (Mirin)1 tbsp
- (A)Salt1 tsp
- Chili Oil(La-yu)as needed
How to make
- 1. Put water and kelp (kombu) in a pot and leave for about 30 minutes.
- 2. Cut the lettuce in half and tear it into bite-size pieces with your hands.
- 3. Slice the Japanese leek diagonally. Cut the silk tofu into 2 equal pieces. Cut off the stems of enoki mushrooms and break them into pieces.
- 4. Heat Step 1 over medium heat, take out the kombu just before boiling, add the processed soy milk and ingredient (A), then simmer.
- 5. Heat Step 3 over medium heat, add the pork belly and Step 2, and when the meat is cooked, serve in a bowl.
- 6. Pour chili Oil (la-yu) and it's ready.
Tips for cooking
Adjust the seasoning to your liking. The processed soy milk may separate when boiled, so be careful with the heat.
