- Green part of Japanese leek30 g
- Soy sauce100 ml
- Water100 ml
- Sugar3 tbsp
- Roasted white sesame seeds1 tbsp
- Grated garlic1 tsp
- Sliced Japanese chili peppers (Takanotsume)1 tsp
How to make
- 1. Mince onion and green part of the long Japanese leeks.
- 2. Boil the eggs in a pot of boiling water for about 6 minutes over medium heat, then drain. Cool in a bowl filled with water, peel off the shell, and drain.
- 3. Add Step 1 and the remaining pickling sauce ingredients to the bowl, and mix well.
- 4. Add Step 2 and Step 3 into a zippered storage bag, and let them soak well. Close the mouth and marinate in the refrigerator for about 6 hours.
- 5. Put the drained egg from Step 4 on the bowl of rice, pour the pickling sauce from Step 4, and it's ready to serve.
