This is a dish with the usual boiled egg added aroma of a fancy black tea. If you marinate in noodle soup base (mentsuyu) with black tea flavor, you will get a refreshing black tea aroma. It is a marinated egg that is a little different from the usual, and that can be enjoyed lightly. You can also use quail eggs boiled in water that is available in stores.

  • Noodle soup base (Mentsuyu)
    150 ml

How to make

  1. Prepare. Bring eggs to room temperature.
  2. 1. Add water, eggs, and salt in a pot and bring to a boil over high heat while stirring with long chopsticks.
  3. 2. Once it comes to a boil, boil over low heat for about 10 minutes to hard boil.
  4. 3. Put boiled egg in a bowl of ice water, stir, let it sit for about 3 minutes, and peel off the shells.
  5. 4. Put the boiling water in a pot, turn off the heat once it boils, add black tea, let it sit for 2 minutes, remove the tea, and add noodle soup base (mentsuyu).
  6. 5. Put Step 4 and the eggs in a storage bag with a zip, and when it cools down, put it in a refrigerator and let it marinate for half a day.
  7. 6. Cut it into any shape you like, place it on a plate and it's ready to serve.
