1 cake (6-inch diameter cake mold)

  • Nama-chocolate
  • Dark chocolate
    100 g
  • Whipping cream (Heavy cream)
    100 ml
  • Sponge cake (Castella)
  • Eggs
    1
  • Egg yolk
    3
  • Sugar
    30 g
  • Honey
    20 g
  • Cake flour (Pastry flour)
    20 g

How to make

  1. Prepare. Preheat the oven to 160°C (320°F). Line a mold with parchment paper.
  2. 1. Make ganache chocolate. Add whipping cream (heavy cream) to the pot and heat over low heat until just before boiling.
  3. 2. Remove from heat, add bitter chocolate, melt well, and let it cool.
  4. 3. Make sponge cake (castella) dough. Place eggs, egg yolks, sugar, and honey in a bowl, warm them in hot water and mix with a hand mixer until white and thick.
  5. 4. Add 1/3 of Step 2 and mix with a rubber spatula until blended.
  6. 5. Sift in cake flour (pastry flour) and mix lightly with a rubber spatula.
  7. 6. Pour into the mold, bake in the oven at 160°C (320°F) for 5 minutes, remove, and pour the remaining Step 2 into the center.
  8. 7. Bake in the oven at 160°C (320°F) for 35 minutes until the castella mixture is cooked through, cool, remove from the pan, and it is ready.

Tips for cooking

Please make sure to preheat the oven before baking. If the oven does not have a preheating function, set the temperature and heat for 10 minutes before baking. The strength of the heat may vary depending on the type of oven and the period of use. Please make sure to follow the recipe as a guide but adjust the baking time as needed. If it browns too fast, cover it with aluminum foil. This recipe uses honey. Please be careful not to let children below the age of 1 (infants) consume them. You can substitute honey with sugar, but since the sweetness varies depending on the type, we recommend adjusting the taste to your liking.
