- Daikon radish120 g
- Salt1/2 tsp
- Potato2
- Carrot70 g
- (A)Japanese Mayonnaise3 tbsp
- (A)Salt2 three finger pinches
- (A)Black pepper2 three finger pinches
- Parsleyas needed
How to make
- Prepare. Finely chop parsley. Peel daikon radish and carrot. Peel potatoes and remove the sprouts.
- 1. Coarsely chop the daikon radish. Place in a bowl, add salt, rub in with your hands, and let sit for about 15 minutes.
- 2. Cut the carrot into 0.2-inch wide quarters. Place in a heat-resistant bowl, cover loosely with plastic wrap, and microwave for about 3 minutes at 600 W.
- 3. Cut the potatoes into bite-size pieces. Place in a separate heat-resistant bowl, cover loosely with plastic wrap, and microwave for about 5 minutes at 600 W. Mash with a fork while still hot.
- 4. Add the drained Step 1, 2, and ingredient (A) to the cooled Step 3 and mix well.
- 5. Serve on a dish, sprinkle with the parsley, and it is ready.
Tips for cooking
Rub the daikon radish with salt, and excess moisture will come out, making the finish less watery. When mixing with the daikon radish, squeeze out the moisture of it well.
