Ingredients 2 servings
- Pork belly150 g
- Hot water500 ml
- Cooking sake50 ml
- Cold water500 ml
- Sweet onion100 g
- Red-leaf lettuce50 g
- Green shiso leaves5 sheets
- Cherry tomato2
- Ume Ponzu Sauce
- Ponzu sauce4 tbsp
- Japanese pickled plum paste (Bainiku)1 tbsp
- White ground sesame2 tsp
- Grated ginger1 tsp
How to make
- Prepare. Remove the stem from the cherry tomatoes and cut them in half.
- 1. Roughly chop the red-leaf lettuce.
- 2. Thinly slice the sweet onion and shred the green shiso leaves.
- 3. Boil a pot of water and add cooking sake, then boil the pork belly for shabu-shabu for about 2 minutes until cooked through.
- 4. Cool the pork belly in a bowl of cold water and drain with paper towels.
- 5. Mix the ingredients of ponzu and Japanese plum (ume) sauce in a bowl.
- 6. Place Step 1, 4, 2 and cherry tomatoes in that order in a bowl, pour Step 5 and it's ready.
Tips for cooking
Boiling the pork belly with cooking sake removes the smell. You can substitute mizuna mustard greens or radish sprouts for the red-leaf lettuce. If you are concerned about the spiciness of the sweet onion, you can soak it in water for about 5 minutes and remove the moisture with a paper towel.
