- Bitter melon1
- (A)Salt1/2 tsp
- (A)Sugar2 tsp
- Base Seasoning
- Soy sauce2 tbsp
- Sake2 tbsp
- Sesame oil1 tbsp
- Grated garlic1 tsp
- Grated ginger1 tsp
- Batter
- Starch4 tbsp
- Black roasted sesame seeds1 tbsp
- Frying oilas needed
- Garnish
- Lemon1 sheets
How to make
- 1. Cut off the stem of bitter melon and cut it in half lengthwise. Remove the white pith with a spoon and cut it into 0.2-inch wide pieces.
- 2. Add Step 1 and (A) in a bowl and rub it well. When the water comes out, squeeze it out and drain the water.
- 3. Add Step 2 and the marinade to a zipper bag and rub it well. Let it rest for 15 minutes.
- 4. Mix the batter ingredients in a separate bowl, then add the drained Step 3 and coat.
- 5. Pour 0.4-inch depth of frying oil into a pan, heat to 170℃ (340°F), and add Step 4. Shallow-fry for about 3 minutes, and when the batter turns brown, drain the oil.
- 6. Transfer to a plate, garnish with lemon, and it's ready to serve.
