- Sake2 slice(s)
- Salt2 three finger pinches
- Cake flour (Pastry flour)1 tbsp
- (A)Noodle soup base (Mentsuyu)1 tbsp
- (A)Japanese sweet cooking wine (Mirin)2 tsp
- (A)Cooking sake2 tsp
- Salted butter10 g
- Eryngii mushroom2
- Garnish
- Green shiso leaves2 sheets
How to make
- 1. Thin-sliced the eryngii mushrooms.
- 2. Put ingredient (A) into a bowl and mix together.
- 3. Sprinkle salt on sake and sift cake flour (pastry flour) with a tea strainer.
- 4. Add salted butter into a pan, heat over medium heat, add the ingredients from Step 1 and 3 when the butter melts and cook.
- 5. Once the sake has browned, turn it over and cook over medium heat until it is cooked through.
- 6. Add Step 2 and stir-fry over medium heat. Once all the flavors have been absorbed and has a shiny look, remove from the heat.
- 7. Spread green shiso leaves on a plate and place the food from Step 6 on it and it's done!
Tips for cooking
You can adjust the amount of salt to your liking. Sprinkling cake flour (pastry flour) on sake will make the flavor tangle up together more. You can use your preferred garnish ingredients.
