- Chicken thigh300 g
- Japanese leek1/2
- Sauce
- Soy sauce1.5 tbsp
- Japanese sweet cooking wine (Mirin)1.5 tbsp
- Cooking sake1.5 tbsp
- Sugar2 tsp
- Salad oil2 tsp
How to make
- 1. Cut the Japanese leek into 1-inch pieces.
- 2. Cut the chicken thigh against the grain.
- 3. Add the sauce ingredients to a bowl and mix together.
- 4. Heat cooking oil in a pan over medium heat, add the chicken thighs from the skin side, and cook over medium heat for about 3 minutes while pressing down with a spatula.
- 5. After wiping off excess fat and flipping the chicken thighs, add Step 1 and cook over medium heat for another 3 minutes.
- 6. When the chicken thighs are cooked through, add Step 3 and cook over high heat until the juices evaporate and the chicken thighs become shiny, then remove from heat.
- 7. Cut into bite-size pieces, place on a plate and it's ready.
Tips for cooking
Adjust the amount of seasoning to your liking. Teriyaki sauce burns easily, so be careful. By pressing down on the chicken thighs while grilling, you can shape them and cook them evenly and cleanly.
