- Potato100 g
- Sweet potato100 g
- Onion20 g
- Hot water500 ml
- (A)Japanese style granulated soup stock1 tsp
- (A)Cooking sake1 tsp
- Miso1 tbsp
- Young green onion (Konegi)as needed
How to make
- Prepare. Peel potatoes and remove potato eyes. Wash sweet potatoes well.
- 1. Cut potatoes into 0.4-inch cubes. Cut sweet potatoes into 0.4-inch cubes, leaving the skin on.
- 2. Thinly slice onion.
- 3. Bring a pot of water to a boil, add (A), Step 1 and Step 2, and simmer over medium heat for about 5 minutes.
- 4. When potatoes and sweet potatoes are cooked, add and dissolve in miso and remove from the heat.
- 5. Serve in bowls and top with a young green onion (konegi).
Tips for cooking
Please adjust the amount of salt to your taste. Cooking sake is added to increase the richness, but you can still cook without it. This time, we cut potatoes and sweet potatoes into small pieces and boil them in hot water because they easily fall apart. If you want to cut it into large pieces such as bite-sized, boil it from water to cook inside evenly.
