- Pork loin200 g
- Eggplant2
- Sesame oil1 tbsp
- (A)Grated ginger1 tbsp
- (A)Ponzu sauce3 tbsp
- (A)Sugar2 tsp
- Young green onion (Konegi)as needed
How to make
- 1. Cut off the stem of the eggplants, and slice them into 0.4-inch wide rounds. Cut pork loin into 1-inch pieces.
- 2. Heat sesame oil in a pan over medium heat, add Step 1 and stir-fry.
- 3. When the pork loin is cooked, add (A) and stir-fry over medium heat. Arrange on a plate and sprinkle with young green onion (konegi) to complete the dish.

Please make it with pork in your favorite parts. The sweetness and sourness will change depending on the type of ponzu sauce, so please adjust the amount of sugar to your taste.
