  • Japanese sweet cooking wine (Mirin)

  • Bread flour

  • Matcha powder

  • Sugar

  • Mashed bean paste

How to make

  1. Prepare. ・Preheat the oven to 170°C (340°F).
  2. 1. Whisk together eggs and sugar until white and thick in a large bowl.
  3. 2. Mix in the honey, milk, Japanese sweet cooking wine (mirin), and cooking oil, then add them to the bowl from Step 1 and mix.
  4. 3. Sift bread flour and matcha powder into Step 2 and mix lightly with a rubber spatula.
  5. 4. Pour Step 3 into the cake mold, beat the bottom of the mold against a table to release air, and bake in an oven at 170°C (340°F) for 10 minutes, then lower the temperature to 150°C (300°F) for 20 minutes until cooked through.
  6. 5. Put whipping cream (heavy cream) and sugar in a bowl and whisk for stiff peaks.
  7. 6. When Step 4 cools down, cut it in half horizontally, spread mashed red bean paste on the bottom part of the cut sponge cake (castella), top with Step 5, and place the top part of the castella on top.
  8. 7. Refrigerate Step 6 for at least an hour, then cut into pieces. It is ready.

Tips for cooking

・This recipe uses honey. Please be careful not to let children below the age of 1 (infants) consume them. ・Please make sure to preheat the oven before baking. If the oven does not have a preheating function, set the temperature and heat for 10 minutes before baking. The strength of the heat may vary depending on the type of oven and the period of use. Please make sure to follow the recipe as a guide but adjust the baking time as needed. If it browns too fast, cover it with aluminum foil. ・You can also use cake flour (pastry flour) instead of bread flour. If you use the bread flour, you will make thick castella; If you use the pastry flour, you will make a fluffy one. Please make it as you like. ・We use sugar-free matcha powder. ・Please adjust the sweetness to your liking.
