- Egg yolk2
- (A)Cake flour (Pastry flour)20 g
- (A)Cocoa powder5 g
- (A)Baking powder1 g
- Milk1 tbsp
- Salad oil1 tbsp
- Egg whites2
- Granulated Sugar30 g
- Salt-free butter10 g
- Raspberry sauce2 tbsp
- Powdered sugaras needed
- Chervilas needed
How to make
- 1. Add the egg yolks, cooking oil, and milk to a bowl and mix well with a whisk each time.
- 2. Sift ingredient (A) in and mix until it's no longer powdery.
- 3. In a separate bowl, whisk the egg whites with a hand mixer. When the mixture starts to bubble to a certain extent, add the granulated sugar in a few at a time and beat thoroughly until the stiff peaks form.
- 4. Add 1/3 of Step 3 to Step 2 and mix with a whisk. Add the remaining Step 3 and mix lightly with a rubber spatula.
- 5. Place unsalted butter over a medium-heated pan and spread it with a paper towel.
- 6. Make 3 pieces of a circle with each 1/3 amount of Step 4 with a diameter of about 3-inch.
- 7. When it browns, flip it over, cover it with a lid, and steam it over low heat for about 3 minutes.
- 8. When it browns, remove it from the heat.
- 9. Place it on a plate, sprinkle powdered sugar, pour raspberry sauce, decorate with chervil, and it's ready to serve.
Tips for cooking
Making meringue until it forms a stiff peak, helps to make the pancake fluffy. You can make a firm meringue by adding granulated sugar in a few at a time.
