- Udon1 head(s)
- Hot wateras needed
- Pork loin100 g
- Hot water1000 ml
- Cooking sake1 tbsp
- Iced wateras needed
- Cucumber1/2
- Cherry tomato3
- Japanese leek10 cm
- (A)White ground sesame2 tbsp
- (A)Japanese Mayonnaise2 tbsp
- (A)Noodle soup base (Mentsuyu)1 tbsp
- (A)Sugar1 tsp
- Young green onion (Konegi)as needed
How to make
- Prepare. Remove stem of cherry tomatoes.
- 1. Cut off the stem of cucumber and slice thinly with a peeler. Cut cherry tomatoes into 2 equal pieces.
- 2. Chop Japanese leek.
- 3. Boil water in a pot, boil udon noodles according to package directions, and cool under running water.
- 4. Boil water in another pot, add cooking sake and pork loin, and boil.
- 5. Once cooked, place in iced water to cool.
- 6. Mix Step 2 and ingredient (A) together in a bowl.
- 7. Place the drained Step 3, 1, drained 5, and 6 in a bowl, sprinkle young green onion (konegi), and it's ready to serve.
Tips for cooking
This time we use pork loin, but you can make it with your favorite part of meat. If you feel the spiciness of Japanese leek disturbing, please soak it in water for about 10 minutes before sprinkling it with seasonings.
