- Firm tofu1 cake(s)
- Cake flour (Pastry flour)3 tbsp
- Frying oilas needed
- (A)Noodle soup base (Mentsuyu, 2x concentrate [1 mentsuyu : 1 water])50 ml
- (A)Water200 ml
- Starch and water mixture1 tsp
- Toppings
- Grated daikon radish10 g
- Young green onion (Konegi)as needed
How to make
- Prepare. Wrap the firm tofu in a paper towel, place the heavy stones on it for about 30 minutes, and drain.
- 1. Cut the firm tofu into 4 equal pieces.
- 2. Coat them with cake flour (pastry flour).
- 3. Pour 0.4-inch depth of frying oil into a pot and heat over medium heat. Add Step 2 and deep-fry for about 4 minutes until everything turns brown, then drain the oil.
- 4. Heat the ingredient (A) in a pot over medium heat. Once it comes to a boil, turn the heat down to low and add the starch and water mixture while mixing. When it thickens, remove it from the heat.
- 5. Place Step 3 in a bowl, pour over Step 4, top with the toppings, and it’s ready to serve.
Tips for cooking
Please mix the starch with water at a ratio of 1:2. Adjust the amount accordingly to the thickness of your liking.
