  • Cake flour (Pastry flour)
    1 tbsp
  • Daikon radish
    300 g
  • (A)Water
    2 tbsp
  • (A)Soy sauce
    1.5 tbsp
  • (A)Sake
    1 tbsp
  • (A)Japanese sweet cooking wine (Mirin)
    2 tsp
  • (A)Sugar
    2 tsp
  • (A)Grated ginger
    1/2 tsp
  • Sesame oil
    1 tbsp
  • Toppings
  • Green shiso leaves
    3 sheets

How to make

  1. Prepare. Peel the daikon radish. Cut off the stem of green shiso leaves.
  2. 1. Cut green shiso leaves into strips.
  3. 2. Cut daikon radish into 0.8-inch wide half-moons. Put it in a heat-resistant bowl, cover it with a plastic wrap, and heat it in a 600 W microwave for about 3 minutes until it's cooked through.
  4. 3. If there are any sake bones, remove them and cut them into bite-sized pieces, then coat them with cake flour (pastry flour).
  5. 4. Put ingredient (A) in a bowl and mix.
  6. 5. Add sesame oil to the heated pan over medium heat and cook the sake from Step 3 with its skin facing down. Take it out once all sides has browned.
  7. 6. Add the drained daikon from Step 2 to the same pan and cook over medium heat. Once it browns, add the sake from Step 5 back in.
  8. 7. Add the mixed seasonings from Step 4 and boil down over medium heat. Remove from the heat once the liquid has evaporated and the flavors have been absorbed.
  9. 8. Serve on a plate, top with the shiso leaves prepared in Step 1 and it is done!

Tips for cooking

This time we cut the daikon radishes thickly, but by heating it in the microwave beforehand, it cooks faster and takes less time. If you are cutting daikon radish thinly, please cook it in the pan without heating it in the microwave. Heating conditions may vary depending on the type of microwave, the type of heat-resistant container, and the condition of the ingredients. Please check the condition and adjust the heating time as necessary.
