  • (A)Hot water
    500 ml
  • (A)Japanese sweet cooking wine (Mirin)
    1 tbsp
  • Seasoned and Boiled Thin Fried Tofu
  • Thin fried tofu (Abura-age)
    1 sheets
  • Boiling water
    as needed
  • Water
    70 ml
  • Sugar
    1 tsp
  • Toppings
  • Young green onion (Konegi)
    as needed
  • Seven flavor chili pepper
    as needed
  • Tempura bits
    as needed

How to make

  1. 1. Pour boiling water over thin fried tofu (abura-age) to remove excess oil. Drain and cut it in half.
  2. 2. Add the rest of the simmering ingredients and Step 1 to a pot, cover with a drop-lid, and heat over medium heat.
  3. 3. Bring to a boil, then reduce the heat to low and simmer for about 15 minutes until the flavors are absorbed.
  4. 4. Heat (A) in a separate pot over medium heat, and when it boils, add udon noodles. Heat according to package directions, then remove from heat.
  5. 5. Serve in a bowl, top with Step 3, young green onion (konegi), tempura bits, and seven flavor chili pepper, and it's ready to serve.

Tips for cooking

Please adjust the amount of salt to your liking. We used frozen udon noodles this time, but you can substitute them with boiled udon noodles. Please add the topping ingredients as you like.
