- Pancake mix200 g
- Unsweetened yogurt100 g
- Eggs2
- Sugar2 tbsp
- (A)Instant coffee1.5 tbsp
- (A)Boiling water3 tbsp
- Salad oilas needed
- Cream
- Unsweetened yogurt300 g
- Cream cheese100 g
- Sugar3 tbsp
- Cocoa powderas needed
- Powdered sugaras needed
- Strawberryas needed
- Mintas needed
How to make
- Prepare. Separate the egg whites and yolks.
- 1. Place unsweetened yogurt for cream into a coffee filter and drain from 3 hours to overnight in a refrigerator.
- 2. Mix ingredient (A) together.
- 3. Add pancake mix, unsweetened yogurt for pancakes, egg yolks and Step 2 in a bowl and mix together to make sure it's mixed evenly.
- 4. In another bowl, lightly beat egg whites, add sugar and beat until firm peaks form.
- 5. Add 1/3 of Step 4 to Step 3 and whisk to combine well.
- 6. Add the remaining Step 4 to Step 5 and lightly mix with a rubber spatula.
- 7. Heat a pan over medium heat and blend cooking oil to the pan with a paper towel.
- 8. Drop Step 6 into the pan 1/6 at a time and cook over medium-low heat until both sides are golden brown and no batter sticks to the pan when you stick a bamboo skewer.
- 9. Add cream cheese in a separate bowl, cover with plastic wrap and microwave for 30 seconds at 600W to soften, then add sugar and Step 1 and mix well.
- 10. Place Step 8, 9, strawberries and mint on a plate, sprinkle the powdered sugar and cocoa powder, and it's ready to serve.
Tips for cooking
You can put the cream on the surface or sandwich it into pancakes. Please serve it as you like. For draining of yogurt for cream, if you drain about 3 hours, it will become moist and light flavor, and it will become thick cream if you drain it for a long time. If you increase the amount of cream cheese, the cream will become thicker and richer.
