- Enoki mushroom1/2 bunch/bundle
- Shimeji mushrooms1/2 bunch
- Hen of the woods (Mitake mushroom)1/2 bunch
- Fish cake (Chikuwa)2
- Japanese Mayonnaise2 tbsp
- Soy sauce1.5 tsp
- Toppings
- White ground sesame2 tsp
How to make
- Prepare. Cut off the hard tip for enoki mushroom and shimeji mushroom.
- 1. Cut fish cake (chikuwa) into 0.2-inch wide pieces. Use your hands to loosen enoki mushroom, shimeji mushroom, and hen of the woods (mitake mushroom).
- 2. Add Japanese mayonnaise and Step 1 in a medium heated pan and stir-fry.
- 3. When the sauce has softened, add the soy sauce and stir-fry over medium heat. When the flavors have settled, remove from the heat.
- 4. Transfer to a plate, sprinkle with ground white sesame seeds, and it's ready to serve.
Tips for cooking
Mushrooms can also be enjoyed by using chewy eryngii mushroom or shiitake mushroom. Please adjust the amount of soy sauce to your liking.
