  • Pork loin

  • Maitake mushroom

  • Water
    300 ml
  • Hot water
    500 ml
  • Ginger

  • Green part of Japanese leek

  • (A)Sake

  • (A)Chicken soup stock (powder, cube, liquid)

  • Plain soymilk

How to make

  1. Prepare. Wash the vegetables well. Remove the stem from cherry tomatoes.
  2. 1. Put pork loin and hand-loosened maitake mushroom with in a strainer, put in a bowl with water, cover with plastic wrap, put in refrigerator, and soak for 15 minutes.
  3. 2. Slice ginger thinly.
  4. 3. Tear red-leaf lettuce and red-leaved chicory into bite-size pieces, cut off the root of mizuna mustard greens and cut into 1-inch pieces.
  5. 4. Boil a pot of water, add Step 2, the green part of Japanese leek, and ingredient (A), then add Step 1 that removed from the water. Boil until cooked through, then drain.
  6. 5. Place the ingredients for soy milk dressing in an airtight container and shake well to mix.
  7. 6. Place Step 3, cherry tomatoes, and Step 4 in a bowl, pour over Step 5, and it's ready to serve.

Tips for cooking

We recommend soaking maitake mushrooms and pork belly in water to soften them. You can easily make a dressing by putting all the seasonings in a glass and shake to mix. Please adjust the amount of salt to your liking.
