Ingredients 2 servings
- Water400 ml
- Small dried sardines10 g
- Thin fried tofu (Abura-age)1/2 sheets
- Miso2 tbsp
- Japanese leek10 cm
How to make
- 1. Remove the small dried sardines' head, split them in half, and remove the belly cap.
- 2. Add some water and Step 1 to a pot and leave it for about 30 minutes.
- 3. Cut the thin fried tofu (abura-age) in half lengthwise and cut it to 0.4-inch width.
- 4. Slice thinly the Japanese leek.
- 5. Heat Step 2 over low heat. When it starts to boil, remove the scum and simmer it over low heat for about 5 minutes, then remove the small dried sardines.
- 6. Add Step 3 and bring it to a boil, then dissolve in the miso and remove it from the heat.
- 7. Serve in bowls, add Step 4 and it's ready to serve.
Tips for cooking
Please adjust the amount of miso to your liking. If you boil small dried sardines for a long time, they will have an astringent taste, so please be careful with the heat level. You can also eat small dried sardines as an ingredient without taking it out.
