- Chicken wings200 g

- Grilled fish cake (Yaki-chikuwa)2

- Rice cake in fried tofu pouch (Mochi kinchaku)4
- Dashi
- Water1000 ml
- Kelp (Kombu)10 g
- bonito flakes10 g
- (A)Cooking sake300 ml
- (A)Light soy sauce2 tbsp
- (A)Japanese sweet cooking wine (Mirin)2 tbsp
- (A)Sugar2 tsp
How to make
- Prepare. Remove the stem from tomato and set aside.
- 1. Wipe the dirt on the surface of the kelp (kombu) with a wet paper towel, place it in water, and leave it for 30 minutes.
- 2. Cut the avocado in half, remove the seed, peel the skin, and cut it into bite-sized pieces.
- 3. Cut deep-fried ball of fish paste (satsuma-age) in half. Cut grilled fish cake (yaki-chikuwa) in half diagonally. Cut hanpen fish cake diagonally.
- 4. Using a bamboo skewer, poke a hole on the bottom side of tomato, pour hot water into a bowl, and let it cool under running water while peeling the tomato.
- 5. Heat Step 1 in a pot over medium heat until just before boiling.
- 6. Remove kelp (kombu) and heat over medium heat, once brought to a boil, turn off the heat, add bonito flakes, rest for 2 minutes, and strain.
- 7. Add Step 6, (A), boiled egg, and chicken wings to a clay pot and simmer over medium heat for 30 minutes until the flavors have absorbed.
- 8. Remove the scum, add Step 2, Step 3, Step 4, and rice cake in fried tofu pouch (mochi kinchaku), bring to a boil, then simmer over medium heat for 5 minutes, and it's ready to serve.
Tips for cooking
You can substitute vegetables of your choice or fish cake. If you cannot prepare light soy sauce, you can substitute your favorite soy sauce.
