How to make
- 1. Crack eggs into a bowl, lightly beat with a whisk, add milk and sugar, and mix together.
- 2. Strain with a tea strainer and pour into a bowl.
- 3. Cover the pan with a cotton cloth (sarashi), add Step 2, pour about 1-inch depth of hot water, cover with a lid, and heat over low heat for about 15 minutes.
- 4. When it sets, turn off the heat, let it steam for about 10 minutes, let it cool, chill on a refrigerator for about 2 hours, garnish with mint, and it's ready to serve.
Tips for cooking
We steamed cook in a pan this time, but you can steam it in the oven to have the same quality as well. In that case, cover it with aluminum foil, fill 0.8-inch depth of hot water on the mold, and bake it in a hot water bath at 160°C (320°F) for 20 minutes.
