  • Japanese pickling juice
    2 tbsp
  • Japanese pickles

  • Green shiso leaves
    2 sheets
  • Roasted white sesame seeds
    1 tsp
  • Semi-dried young sardines (chirimenjako)
    2 tbsp

How to make

  1. 1. Add the rice in a bowl, add Japanese scallion (rakkyo) sweet vinegar marinade, and mix like you're cutting, to make sushi rice.
  2. 2. Cut rakkyo in half lengthwise, then thinly cut in lengthwise.
  3. 3. Remove the stem from green shiso leaves and slice it thinly.
  4. 4. Add half of Step 2 and dried young sardines to Step 1 and mix.
  5. 5. Plate Step 4 on a plate, sprinkle the rest of Step 2, Step 3, and white roasted sesame seeds to complete the dish.

Tips for cooking

There is a difference in the taste of the marinade depending on the type of rakkyo, so please taste it and adjust the amount while mixing it with rice. If there is no marinade, please substitute sushi vinegar. Please adjust the amount of salt to your liking.
