This is a recipe for fluffy barracuda (kamasu) tempura with an addictive crispy and fluffy texture. Although it has a light taste, it is full of umami, and the taste gets deeper the more you chew it. The flavor of dried green seaweed flakes (aonori) serves as an accent. It's also a great accompaniment to alcohol.

Ingredients

  • Barracuda (Kamasu)
    2
  • Salt and pepper mix
    1/3 tsp
  • Batter
  • Tempura flour
    70 g
  • Water
    100 ml
  • Dried green seaweed flakes (Aonori)
    2 tbsp
  • Frying oil
    as needed
  • Salt
    1/2 tsp
  • Cayenne pepper (powder)
    1/4 tsp

How to make

  1. Prepare. Slice barracuda (kamasu) into three slices.
  2. 1. Cut barracuda (kamasu) into 1 inch strips and sprinkle salt and pepper mix.
  3. 2. Put the batter ingredients in a bowl and mix together.
  4. 3. Pour 1 inch depth of frying oil into a pot, heat to 180℃ (356°F), dip Step 1 into Step 2 then add into the frying pan. Deep fry for about 5 minutes while flipping them several times, then drain the oil when the barracuda (kamasu) is cooked through.
  5. 4. Serve it on a plate, garnish with salt and cayenne pepper (powder), and it's ready to serve.

Tips for cooking

Please adjust the salt to your taste. You can also dip it on dipping on noodle soup base (mentsuyu) to enjoy the taste. *You must be of legal drinking age
