How to make
- Prepare. Bring the eggs to room temperature.
- 1. Bring a pot of water to a boil, add the eggs, and boil over medium heat for 6 minutes.
- 2. Remove the eggs, soak in ice water to cool, and peel the shells.
- 3. Place in a plastic bag, add noodle soup base (Mentsuyu), tie the mouth of the plastic bag, and let it sit in a refrigerator for half a day. Serve it on a plate with green shiso leaves, and it's ready to serve.
Tips for cooking
The amount of hot water should be enough to soak the eggs. This recipe uses 2 times concentrated noodle soup base (mentsuyu), but you can make it with about 65 ml for 3 times concentrated, and about 200 ml for straight mentsuyu. This amount is an estimation, so please adjust it as you like. For senior citizens, children under the age of 2, pregnant women, and individuals with weakened immune systems, please avoid eating raw eggs. *You must be of legal drinking age
