- Shiitake mushroom2
- Maitake mushroom50 g
- Nameko mushroom50 g
- Dashi
- Water300 ml
- Noodle soup base (Mentsuyu)100 ml
- Japanese sweet cooking wine (Mirin)1/2 tbsp
- Toppings
- Young green onion (Konegi)as needed
- Cayenne pepper (powder)as needed
How to make
- Prepare. Wash the nameko mushrooms under running water and drain.
- 1. Cut off the shiitake mushroom stems and thinly slice them. Remove the maitake mushroom hard tip and break them with your hands.
- 2. Put the soba noodles into a heat-resistant bowl, heat it in the microwave as the package says, and thaw it.
- 3. Put the dashi (Japanese soup stock) ingredients in a pot and bring it to a boil over medium heat.
- 4. Add Step 1 and simmer over medium heat for about 2 minutes, then add the nameko mushrooms and simmer it for about 1 minute, then remove it from the heat.
- 5. Serve Step 2 in a bowl, pour in Step 4, top with toppings, and it’s ready to serve.
Tips for cooking
Nameko mushrooms cook faster than other mushrooms, so please add them just before finishing. We used frozen noodles this time, but you can also enjoy them with boiled or dried noodles. We used the frozen soba noodles that can be microwaved with the packet. Please defrost according to the package description. Heating conditions may vary depending on the type of microwave, the type of heat-resistant container, and the condition of the ingredients. Please check the condition and adjust the heating time as necessary.
