Ingredients
1 cake stand (6-inch mold)

  • Silk tofu
    300 g
  • Plain soymilk
    170 ml
  • Black sesame paste
    2 tbsp
  • Gelatin powder
    10 g
  • Water
    40 ml
  • Sugar
    30 g
  • Tart
  • Biscuit
    60 g
  • Melted butter
    40 g
  • Roasted soybean flour
    20 g
  • Chervil
    as needed

How to make

  1. 1. Sprinkle gelatin powder into the water and bloom.
  2. 2. Place biscuits in a bag and crush with a rolling pin until finely ground.
  3. 3. Add the melted butter and roasted soybean flour and rub well.
  4. 4. Put Step 3 into a mold covered with parchment paper, press it firmly with a spoon, and chill it in the refrigerator.
  5. 5. Wrap silk tofu in a paper towel, put it in a heat-resistant bowl, heat it in a microwave without plastic wrap at 600W for about 1 minute, and drain.
  6. 6. Remove paper towel and sieve.
  7. 7. Add Step 6, black sesame paste and sugar to a saucepan and stir well with a heat-resistant spatula. When the mixture is well mixed, add plain soymilk and heat over medium heat while mixing, then remove from the heat just before boiling.
  8. 8. Add Step 1, stir it well, let it cool, pour into Step 4, and chill in the refrigerator for about 3 hours.
  9. 9. When it is set, take it out of the mold, top with the chervil, and it's ready.

Tips for cooking

The temperature of the hot water you should use for gelatin depends on the manufacturer, so please check it and follow the usage instructions. Please be careful not to boil the gelatin as it will decrease the solidification rate and make it hard to set. Also, please be aware that fruits such as raw pineapple, kiwi and papaya containing protease may not be set. We used a heat-resistant spatula. The rubber spatula may melt, so please use a heat-resistant one. Heating conditions may vary depending on the type of microwave, the type of heat-resistant container, and the condition of the ingredients. Please check the condition and adjust the heating time as necessary. Plain soymilk may separate if boiled, so be careful with the heat level.
