- Chicken thigh250 g
- Ginger1
- Garlic1
- Seasoning
- Soy sauce3 tbsp
- Cooking sake2 tbsp
- Japanese sweet cooking wine (Mirin)2 tbsp
- Sugar2 tbsp
- Vinegar1 tbsp
- Sesame oil1 tbsp
How to make
- 1. Cut the garlic in half and remove the sprouts. Thinly slice the ginger with the skin on.
- 2. Make a cut to the thick part of chicken thigh, open it, and pound it with a rolling pin to make it about 0.2-inch thick. Roll it tightly with the skin side facing out, and fasten the end of the roll with toothpicks.
- 3. Add sesame oil to a pan heated over high heat, place the end of the roll of Step 2 facing down, and cook. Once it browns, remove it from the heat.
- 4. Heat Step 1 and seasoning ingredients in a pot over medium heat until the sugar melts, then add Step 3. Cover with a drop-lid made with parchment paper and simmer over low heat for about 15 minutes.
- 5. When it's cooked through, remove it and let it cool. Remove the toothpicks, cut into bite-sized pieces, put them in a container with the sauce, and it's ready.
Tips for cooking
Please adjust the seasoning to your liking. When simmering with the sauce in Step 4, be careful with the heat level as it will burn easily. *You must be of legal drinking age to consume alcoholic beverages.
