- Wax gourd (Winter melon)200 g
- Ginger1
- Water400 ml
- Japanese style granulated soup stock1 tsp
- Light soy sauce2 tsp
- Salta pinch
- Tororo kombu4 g
- Young green onion (Konegi)4 g
How to make
- 1. Remove the seeds and the white pith from the wax gourd (winter melon), peel the skin, and cut it into 0.4-inch cubes. Peel and grate the ginger.
- 2. Add the winter melon, ginger, and water to a pot and simmer over medium heat for about 10 minutes.
- 3. Once winter melon is cooked through, add Japanese-style granulated soup stock, light soy sauce, and salt and bring it to a boil.
- 4. Mash the Step 3 winter melon roughly with a fork.
- 5. Serve it in bowls, top it with tororo kombu, sprinkle with young green onion (konegi), and it's ready to serve.
Tips for cooking
Please adjust the amount of salt and ginger to your liking. Please adjust the cooking time as it will vary depending on wax gourd (winter melon).
