- Red bell pepper (Paprika)1/4
- Yellow bell pepper (Yellow paprika)1/4
- Eggplant1/2
- Zucchini1/2
- Onion1/4
- Okra3
- Bacon block70 g
- Salad oil2 tsp
- Water400 ml
- Curry mix (Curry roux)60 g
- Rice2 dish(es)
How to make
- 1. Cut bell pepper, eggplant diagonally, and zucchini into 0.2-inch thick round slices.
- 2. Cut off the hard part around the calyx for okras.
- 3. Thinly slice onion.
- 4. Cut block bacon into bite-sized pieces.
- 5. Add Step 3 and cooking oil to a pan and stir-fry over low heat. Once the bacon has softened, add Step 4 and stir-fry over medium heat.
- 6. Add Step 1 and stir-fry over medium heat, then add water and simmer for about 5 minutes.
- 7. Turn off the heat and add Japanese curry roux to dissolve, then add Step 2, bring to a boil, and it's ready. Serve over rice to enjoy.
Tips for cooking
Please adjust the amount of water and curry roux according to the roux you have at home. Please adjust the saltiness and spiciness to your liking.
